Couscous Salad

I know, I’ve been a bad blogger recently. Regular blogging is tough. Maybe its because I’m easily distracted. Look at the pretty butterfly over there….What was I saying? Oh yes, distractions, they happen and often. It is easy and surprisingly fun to write this blog once I get into it but sometimes I forget I even have a blog. Every once in a while it is nice to have a pizza-booze-tely night with my lovely boyfriend and leave the cooking to the professionals over at pizza hut. How I love their cheese stuffed crust, such a guilty pleasure. And after one of those nights it’s easy to become lazy about cooking. I’ll end up making quick meals or things we’ve had a million times–nothing blog worthy.

Then there are other times, like tonight, when I cook up a storm. I’ve got five different dishes on the menu tonight, four of which still need to be assembled–maybe I should be writing this later. The masses can wait. After all the chef should be able to decided when it’s dinner time. But as for the dishes, I’ll be blogging most of them in the near-ish future once I get my computer fixed.

Chicken Empanadas

I like to think of these as chicken hand pies, or perhaps more like a chicken pot pie, but entirely contained and less soggy. They are so adaptable. The filling I used for this batch was fairly simple. It was mainly olives, chicken and onions but you could add anything. I think carrots and some celery would be a nice flavor addition. You could make a beef version with red wine instead of white. It is really a good way to use up some leftover in a creative fashion.

I was always hesitant of chicken empanadas when I lived in Nicaragua because I thought that sugar and meat should not go together. So I just bought the sweet empanadas instead–i’ll have to try to make some of those another time.

Broccoli Cornbread muffins

Sam and I should be up in the mountains of Big Sur, CA camping right now. I’ve set up this post to be published automatically so no one gets to bored while we are away. Sam and I are car hunting. We didn’t get to go camping because his car died a very noisy death in the middle of an intersection. Our mini vacation was postponed for another time. In the meantime we have been having a very lovely and relaxing time visiting family. On the other hand, the car salesmen haven’t been so lovely.

Another reason for my recent lack of blogging has been due to camera issues.
